SALMON WITH PINEAPPLE SALSA – Brenda Oberto
1 ½ cups diced fresh pineapple
or drained can unsweetened chunks
¼ cup minced red bell pepper
¼ cup minced green bell pepper
¼ cup minced red onion
¼ cup chopped cilantro
1 TBSP fresh lime juice
2 tsp minced seeded Jalapeño pepper
¼ tsp grated lime peel
Combine all ingredients and season to taste with salt
Salmon -
4 6-8 oz ¾ inch thick salmon steaks
I tsp low sodium soy sauce
Preheat broiler, brush with soy sauce and place on broiler pan. Broil until salmon is just opaque in the center about 3 minutes each side. Serve the salmon on the plate with salsa on the side
